Crazy Good, Easy Breakfast Casserole

I'm ashamed to admit I don't like eggs. I wish I did. I understand there are many health benefits found in eggs, but I still struggle to eat them. So it should mean something when I say this: this egg casserole is good. You would believe me if you fully understood how weird it is for me to say that of an egg dish.

And it has only six ingredients. (If you lump the spices into one ingredient. The back of nutrient labels do it, so why shouldn't I?)

  • 1 lb. sausage
  • 9 eggs
  • 4 cups frozen shredded potatoes
  • 2 cups shredded cheese (I usually use cheddar)
  • 1/4 cup milk
  • 1/2 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. sea salt
  • 1 tsp. black pepper


Preheat your oven to 350 degrees. Grease a 9x13 dish and set aside.

Brown the sausage in a skillet with the spices, breaking it up into small pieces as you go. After browning, drain grease if needed.

In a large bowl whisk the eggs up, then add the rest of the ingredients in together. Mix well and pour into the prepared baking dish. Smoosh down with a spatula a bit so it's even across the top.

Bake for about 40 minutes or until hot and bubbly!

Serves 6 hungry people or 8 moderately hungry people.
