Pumpkin Pancakes with Pumpkin Syrup [Celebrating Fall, Day 6/7]

Sorry about the absence yesterday. Life caught up with me and I dropped the ball. Oh well.

I thought I'd share with you some delicious pumpkin pancakes with pumpkin syrup that I made yesterday. If you have a pumpkin craving—this would be the perfect fix!

Pumpkin Pancakes

Adapted from Brunch and the City


  • 2 cups flour
  • 3 tbsp. brown sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tbsp. vegetable oil
  • 2 tbsp. vinegar
In a medium bowl, mix the dry ingredients together. In a separate bowl, whisk together the milk, pumpkin, egg, oil, and vinegar. Stir in the dry ingredients to the pumpkin mixture until just combined. Do not over mix.
I started with 2 cups of milk, but needed to thin out the mixture with a bit more.

Cook pancakes over medium-low heat on a greased pan or griddle. Flip when bubbles rise to the surface.

Pumpkin Syrup

Recipe from my mother.


  • 1 cup maple syrup
  • 3/4 cup pumpkin puree
  • 1/4 tsp. cinnamon
Mix ingredients in a small sauce pan and heat until warmed through.

I toasted some chopped walnuts to add some crunch. Yum!
