Cabbage and Mushroom Stir Fry

Hello friends. Some of you may have noticed my absence the past few days. Life got a little crazy and I chose to stay sane and put the series on pause for a bit. But I'm back with another veggie dish!

I've begun to think that cabbage is a seriously underrated vegetable. It's great and packs quite a nutritious punch. My hubby is not a big fan, but I'm slowly trying to convert him. When I was cooking this he said a couple times that it smelled really good and "fresh." I'll take that as a small step in the right direction.

This is one of those dished that can be both a side dish and a main dish if you add some protein. I think just about any meat would work fabulously here— chicken, beef, pork, shrimp.

It tastes similar to the inside of an egg roll or the veggies in lo mein. Yum-my.

Cabbage and Mushroom Stir Fry

Adapted from Divine Healthy Food

Ingredients

1 tablespoon olive or coconut oil
3 green onions, diced
3 garlic cloves, minced
A pinch of red pepper flakes
1/2 head cabbage, shredded
4 oz. mushrooms, sliced thin
3 teaspoons wheat-free soy sauce or coconut aminos
1 teaspoon onion powder
1/2 teaspoon smoked paprika

Directions


  1. Warm the oil over medium heat in a large skillet and add in green onion, garlic, and red pepper flakes. Stirring for about 30 seconds.
  2. Add in the cabbage and mushrooms and saute for about 5 minutes or until softened slightly.
  3. Stir in the remaining ingredients and continue to saute for an additional 5 minutes.
  4. Serve warm.

    The way I've tricked Tony into eating cabbage was with Bierocks. He loves those, but claims he still hates cabbage. -Those husbands, they're like little kids! ;)
