I've begun to think that cabbage is a seriously underrated vegetable. It's great and packs quite a nutritious punch. My hubby is not a big fan, but I'm slowly trying to convert him. When I was cooking this he said a couple times that it smelled really good and "fresh." I'll take that as a small step in the right direction.
This is one of those dished that can be both a side dish and a main dish if you add some protein. I think just about any meat would work fabulously here— chicken, beef, pork, shrimp.
It tastes similar to the inside of an egg roll or the veggies in lo mein. Yum-my.
Cabbage and Mushroom Stir FryAdapted from Divine Healthy Food
Ingredients1 tablespoon olive or coconut oil
3 green onions, diced
3 garlic cloves, minced
A pinch of red pepper flakes
1/2 head cabbage, shredded
4 oz. mushrooms, sliced thin
3 teaspoons wheat-free soy sauce or coconut aminos
1 teaspoon onion powder
1/2 teaspoon smoked paprika
- Warm the oil over medium heat in a large skillet and add in green onion, garlic, and red pepper flakes. Stirring for about 30 seconds.
- Add in the cabbage and mushrooms and saute for about 5 minutes or until softened slightly.
- Stir in the remaining ingredients and continue to saute for an additional 5 minutes.
- Serve warm.
