Chicken with Alfredo Sauce

Ok, this alfredo isn't Paleo, obviously. It's full of dairy — creamy, delicious dairy. But it's wonderful on chicken and good for a quick lunch or weekday dinner.

Chicken with Alfredo Sauce


1 pound chicken, cut into bite-sized pieces
1 teaspoon coconut oil
1 tablespoons butter
2-3 garlic cloves, minced
8 ounces cream cheese, cut into 8 pieces
2 cups milk
1/2 cup grated Parmesan cheese
salt and pepper, to taste


Season the chicken with salt and pepper and brown it in the coconut oil until cooked through.
In a separate pot, melt the butter over medium-high heat. Add the garlic and cook for about 30 seconds, then dump in the cream cheese. Whisk around while it melts a bit. Slowly add in the milk while whisking until smooth. Pour in the Parmesan cheese, lower the heat to medium and simmer for about 10 minutes or until thickened a bit, stirring occasionally. Serve the sauce with the cooked chicken.
