Endive Taco Boats with Fresh Pico de Gallo

I love Mexican food. It's my fave. I go through salsa like many people go through ketchup. So I miss tortillas since deciding to go on the Primal diet. They were easy to grab and fill with my favorite, south-of-the-border flavors.

Lettuce cups are a pretty common alternative to a wrap or tortilla, but they can be a bit cumbersome and messy. These endive boats hold their shape a bit better. I like how they are smaller so that you can load each one up with the perfect balance of toppings.

I would imagine that kids would love these too.They could customize and build their own boats according to their preferences and the smaller size might appeal to smaller hands.

These taco boats would make great little appetizers at a party too!

Endive Taco Boats with Fresh Pico de Gallo

Ingredients

3-5 endives, depending on size
1 pound hamburger
3 tablespoons taco seasoning
1 cup onion, diced
1 cup tomato, seeded and diced
1 handful cilantro, minced
1-2 jalapenos, seeded and diced
Your choice of toppings: cheese, sour cream, bell pepper, jalapeno, etc.

Directions


  1. Combine the onion, tomato, cilantro, and jalapeno and set aside. It tastes best if you can make it ahead and chill for a couple of hours.
  2. Cut off the ends of the endive and separate the leaves.
  3. Brown the hamburger then add in the taco seasoning.
  4. Build your boats with the meat, pico de gallo, and your choice of toppings.
  5. Enjoy!
