Lettuce cups are a pretty common alternative to a wrap or tortilla, but they can be a bit cumbersome and messy. These endive boats hold their shape a bit better. I like how they are smaller so that you can load each one up with the perfect balance of toppings.
These taco boats would make great little appetizers at a party too!
Endive Taco Boats with Fresh Pico de Gallo
Ingredients3-5 endives, depending on size
1 pound hamburger
3 tablespoons taco seasoning
1 cup onion, diced
1 cup tomato, seeded and diced
1 handful cilantro, minced
1-2 jalapenos, seeded and diced
Your choice of toppings: cheese, sour cream, bell pepper, jalapeno, etc.
- Combine the onion, tomato, cilantro, and jalapeno and set aside. It tastes best if you can make it ahead and chill for a couple of hours.
- Cut off the ends of the endive and separate the leaves.
- Brown the hamburger then add in the taco seasoning.
- Build your boats with the meat, pico de gallo, and your choice of toppings.
