Pizza Salad with Tomato Vinaigrette

If pizza and salad had a baby, this would be it— pizza salad. :)

Need I say more?

And it's totally customizable to your taste preferences. Whatever you like on a pizza, put it on this salad.

I like pepperoni, red onion, and olives, but bacon and peppers would work too. Whatever floats your boat.

Pizza Salad with Tomato Vinaigrette

For Salad:

Whatever pizza toppings you like (suggestions: cheese, pepperoni, bacon, olives, mushrooms, peppers, red onion, peperoncini, etc.)

For Tomato Vinaigrette: (adapted from Savory Simple)

1 (14 oz.) can of fire-roasted tomatoes
2/3 cup olive oil
1 tablespoon balsamic vinegar
2 tablespoons red wine vinegar
2 teaspoons roasted garlic or 1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon crushed red pepper
1/2 teaspoon dried oregano
1 teaspoon dried basil

Blend all vinaigrette ingredients in a blender until smooth. For best results, chill in your refrigerator for at least an hour to let the flavors develop. Chop lettuce into bite-sized pieces, top with your favorite pizza toppings, and serve with the tomato vinaigrette.
