Delicious Steakhouse-Style Sherry Mushrooms

During college I worked as a server in a steakhouse. It wasn't my favorite job, but one perk is that we were allowed to eat a couple side dishes for free every shift.

I usually picked the mushrooms. You know those delicious little mushrooms that pretty much every steakhouse serves? Meaty and rich — full of "umami."

Well, instead of paying $5 for a tiny little plate in a restaurant, you can grab 4 ingredients from your kitchen and have them tonight!

Sherry Mushrooms

Serves 2-3

Ingredients

16 oz. button mushrooms
3 tablespoons butter (or ghee, if paleo)
1/2 cup sherry
1/2 teaspoon rosemary, crushed

Directions

Wash and dry mushrooms, then cut any large mushrooms in half. In a large skillet, melt 1 tablespoon butter over medium-high heat, add mushrooms and cook for a minute. Reduce heat to medium, then carefully pour in sherry and rosemary and let simmer for 15-20 minutes or until the liquid is reduced by half. Turn off heat and stir in the remaining butter.
