Grapefruitade with Honey Simple Syrup

I am so over winter. This year especially has been a drag. There's been hardly any sunshine and pretty much no snow — just drab, cloudy, very cold days.

To lift my winter-weary mood, I've been looking for ways to bring a bit of summer to my life. I'm adding color to my home decor, watching a few summery movies, and drinking this grapefruitade.

This drink is actually the best of both seasons. Most people associate citrus fruit with the summer  — like sipping on ice cold glasses of lemonade while sitting by a pool, but actually a lot of citrus fruit is in season now. So we can eat seasonally and still pretend (deny) that it's the middle of this never-ending winter.

I chose to sweeten this drink with a honey simple syrup because I didn't want to completely negate the health benefits with a bunch of processed sugar. Simple syrups are easy-peasy too. They are just equal parts sweetener and water, heated gently until the sugar dissolves. This allows us to use honey in a cold drink because otherwise the honey would just stay in a undissolved glop on the bottom of the glass.

Feel free to add more or less honey simple syrup based on your taste preferences.
